French Potato Cakes

Ingredients:
Potato
Yellow onion
Peanut oil

Grate potato and onion into a bowl. Add peanut oil in a frying pan, when heated (medium heat) add a scoop of potato and onion into pan (silver dollar size or larger). Pat down. Cook approximately 10 minutes on each side until crispy.


-I haven’t tried this before but while I was adding the post I was thinking back how these tasted when I use to make them years ago. Try adding some imitation lobster (cut up real small), chopped green and red peppers (real fine), a little seasoning such as salt and pepper, little garlic and a splash of lemon juice to the grated mixture, might be a tasty treat to make as a side entrĂ©e for dinner.
