Ingredients:
1 cup of white sugar
1 Tblsp grated lemon rind (optional)
6 Tblsp margarine
2 eggs (large)
1 ½ cup flour
½ tsp salt
1 tsp baking powder
½ cup milk
1/2cup chopped nuts
¼ cup white sugar
3 Tblsp lemon juice
Cream (with an electric mixer) 1 cup sugar with margarine. Add lemon rind. Beat in eggs. In a small bowl sift flour, baking powder and salt and blend. Add to mixture of eggs, sugar, and margarine alternating with milk. Stir in nuts. Preheat over to 325-350 degrees. Bake in a greased and floured 4x8x2 pan for 35 – 45 minutes or until a cake tester or wooden toothpick comes out dry (test from the center of the bread). Before bread is done in a small saucepan heat ¼ cup of white sugar and 3 Tblsps lemon juice until dissolved. Let combination boil until it is thick. When Bread comes out of the oven pour sugar and lemon juice mixture over the bread so it absorbs it. Cool then take out of pan, serve next day or freeze.
Our Mother makes this at Thanksgiving and at Christmas time. I prefer to double the lemon juice and sugar mixture when I make it to have the bread a little bit sweeter.
