Peanut Butter Cookies (better known as Mrs. Connolly’s)

These were our absolutely favorite cookies my Mom would make for the Holidays. She made them real thin so they tasted great dipped in milk.


Ingredients:
½ cup shortening (butter or margarine softened)
½ cup peanut butter
½ cup sugar
½ cup packed brown sugar
1 egg
1 ¼ cup flour
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt (optional)

Mix thoroughly shortening, peanut butter, sugars, and egg. Blend in flour, baking soda, baking powder, and salt. Cover and chill. Heat oven to 375 degrees. Using a spoon scoop dough and roll into 1 inch balls. Place 3 inches apart on a lightly greased baking sheet. Dip a fork into some flour and flatten each ball making a criss cross pattern to 2 inches. Bake 10 to 12 minutes or until set but NOT hard. Makes approximately 3 dozen.
