Grammy's Coleslaw Recipe

    Over the years our Father has made our Grandmother's Coleslaw recipe (with a lfew modifications) and has brought to our parties and people RAVE over it! Great for summer cookouts!

Ingredients:

Shred or Buy Pre-shredded:
1 head of cabbage
3 carrots grated
1 small onion cut up very fine

Mix:

1 cup of maynoise
1 tblsp sugar
1 tblsp milk
1 tblsp of vinegar
1 tblsp of horse radish (optional)
1 tsp salt
1/2 tsp pepper
1/2 tsp celery seed
a dash of paprika

Completely mix all ingredients together.  Pour into the cabbage mixture and toss with a fork. Refrigerate overnight.

Grammy's Homemade Potato Salad

Ingredients:
5 lbs potatoes
6 eggs
1 medium onion
1 tblsp salt
1/4 tsp mustard
6 medium celery stalks
Dash of pepper
Mayonaise to taste

 Peel potatoes and cut in half and boil in salted water. Let potatoes cool.  Boil 6 eggs and cool.  Peel and cut the eggs very small.  Slice and dice celery and onion.  Mix onions, celery, eggs, mustard with quite a bit of maynoise until mixture is soupy.  Cut up potatoes quite small, mix in layers with egg mixture.  Toss. Refrigerate.

* May also use Italian salead dressing for seasoning and a little chive for decoration.

Home remedy to relieve itching from Mosquito Bites

Soap:
Trying rubbing a wet bar of soap on your mosquito bites, let it air dry.

Witch Hazel:
You can also try witch hazel just apply with a cotton ball and let air dry. Can you buy a bottle for under $1 in most stores and the bottle will last a long time.

Prevention of Mosquito Bites

My Husband's Aunt told me a great solution to prevent Mosquito Bites. She uses "Bounce Dryer Sheets" at her grandchildren's baseball games to prevent getting bit.  I was anxious to try this as Mosquitos love me.  I can't stand bug spray so I tried this when my family and I went camping for a week.  I bought a box of dryer sheets and wiped one over my clothes, my arms, legs, feet, and hair.  I kept the used dryer sheet tucked under my bra strap on my shoulder.  As much to my surprise, it really worked.  My kids loved to wipe themselves every night rather than being sprayed....and you'll smell nice!!!

* I have also tried the generic brand dryer sheets and they seem to work as well.  Great for baseball games, evenings on the beach, or camping.

Peanut Butter Cookies (better known as Mrs. Connolly’s)

These were our absolutely favorite cookies my Mom would make for the Holidays. She made them real thin so they tasted great dipped in milk.


Ingredients:
½ cup shortening (butter or margarine softened)
½ cup peanut butter
½ cup sugar
½ cup packed brown sugar
1 egg
1 ¼ cup flour
¾ tsp baking soda
½ tsp baking powder
¼ tsp salt (optional)

Mix thoroughly shortening, peanut butter, sugars, and egg. Blend in flour, baking soda, baking powder, and salt. Cover and chill. Heat oven to 375 degrees. Using a spoon scoop dough and roll into 1 inch balls. Place 3 inches apart on a lightly greased baking sheet. Dip a fork into some flour and flatten each ball making a criss cross pattern to 2 inches. Bake 10 to 12 minutes or until set but NOT hard. Makes approximately 3 dozen.

Magic Cookie Bars

My mother would let us make these cookies at a young age because they were so easy. They are great treat to make with kids! (Similar to the Double Delicious Cookie Bars)

Ingredients:
½ cup of margarine or butter
1 ½ cups graham cracker crumbs
1 (14 oz) can Eagle Brand Sweetened Condensed Milk (Not Evaporated Milk)
1 (6-ounce) semi-sweet chocolate chips
1 ½ cups of flaked coconut
1 cup of chopped nuts (optional)

Preheat oven to 350 degrees (325 for glass dish). Use 13x9 inch baking pan and melt margarine in oven. Sprinkle crumbs evenly over margarine, pour Eagle Brand evenly over crumbs. Top with chips: press down firmly. Bake 25 to 30 minutes or until lightly browned. Cool. Cut into bars. These can be stored loosely covered at room temperature

Prep time 10 minutes makes 24-36 bars.

Double Delicious Cookie Bars

Ingredients:

I have had this recipe for some years now; these are great for the kid’s school when a dessert is required.

Mom’s Corn Bread

Ingredients:
¾ Cup of Sugar
2 eggs
¾ tsp salt
1 ½ cup flour
1 ½ cup Quaker Corn Meal
1 tblsp baking powder
1 tblsp melted butter
1 ½ cup milk


Mix sugar and eggs in a bowl. Beat well. Sift flour, baking powder and salt. Stir in cornmeal. Add butter and milk to dry ingredients and mix well. Put into greased pan 8x8 and bake at 425 degrees for 20 minutes. This is great when served with Chili.

You can also make muffins rather than bread if you desire.

Mom's sausage casserole

feeds family of 4-6+
one package of hot sausage links & sweet links
take out of skin and cook in a pan
boil 2 boxes of shell noodles
once sausage is all cooked mix spagetti sauce (1 - 2 ) jars, mozzeralla cheese (2 bags), sausage, and shells all together. pour into a casserole dish, bake around 350 degrees until cripsy on the edges. serve with garlic bread.

Crock Pot Pulled Pork

In a crock Pot add:
1 cup of chopped white onion
3 to 5 lbs of boneless pork ribs
salt
pepper
minced garlic approx 2 tablespoons (whatever you like)
fill water to cover

cook on high in crock pot for 8 hrs then drain. Put bakc in crock pot and add 1 bottle of Chipotle BBQ sauce and mix. Pork should fall apart. Make sure all Pork is covered with BBQ sauce.
Cook for another 2 to 3 hrs.

Server on a Bulky roll or Bisquit andBBQ baked beans, coleslaw, or cornbread.

Jello Shots (Amanda's Famous Recipe)

Spice up a party with this treat!
Our favorite is Strawberry Jello and Melon Fushion Jello!

To make:
Follow any box of Jello BUT substitute the cold water part with Malibu Coconut Flavor Rum. Pour into condiments cups (you can find them at Alliant Food Warehouse) and chill. Serve to guests when ready.

PEANUT BUTTER CLUSTERS (otherwise known as Vicki cookies) NO BAKE

2 cups peanut butter chips
1 cup milk chocolate chips
1 ½ cups dry roasted peanuts
1 cup crushed ridged potato chips

In a microwave-safe bowl, melt the chips (both of them together); stir until smooth.
Stir in peanuts and potato chips.
Drop by level tablespoonfuls onto waxed paper-lined baking sheets.
Refrigerate until firm.
Store in an airtight container.
Yield: about 3 ½ dozen

Lemon Snow Bars

Crust:
1/2 cup of butter
1 1/3 cup flour
1/4 sugar

Filling:
2 eggs
3/4 cup sugar
2 tbls of flour
1/4 tspn of baking powder
3 tbls of lemon juice
powdered sugar

Instructions:
combine crust ingredients on low speed. Pat into ungreased 8" square pan. Bake at 350 degrees for 15 - 20 minutes. Blend filling ingredients and pour over partially baked crust and return to oven for 18 - 20 minutes. Take out of oven, sprinkle with powdered sugar and let cool.

Headache Remedy

Quick and dirty trick to help reduce the discomfort of a headache:
If you dont have a soft ice pack or dont want to get an ice burn try taking a rag or wash cloth wet and stick it in the freezer folded. Next time you have a headache take it out of the freezer and rinse it until its movable, squeeze the majority of the water out. Fold and place on head.
ahhh relief!

One Minute Candy - NO Baking required

1 cup of sugar
1/4 cocoa
1/4 milk
1/4 cup of butter
1 cup quick oatmeal
1/2 tsp of vanilla
1/4 cup peanut butter
1/4 shredded coconut

In a sauce pan mix sugar, cocoa, milk, and butter and bring to a boil.
Let boil for one minute, stirring constantly.
Remove from heat. Mix in remainder of ingredients.
Drop onto waxed paper and let harden.

Geat for a quick chocolate fix!
